Pesto and Goat Cheese Tartlets

Here is another one of the appetizer recipes I promised from the baby shower I threw for my sister-in-law. I love goat cheese, and these little puff pastry treats are sure to please. I have made this appetizer a few times since I found the recipe in “Greatest Ever Party Food.” I will continue to make it. 


Pesto and Goat Cheese Tartlets (makes 20)

7 oz of ready-made puff pastry, thawed
All Purpose flour (for dusting)
3 Tbsp pesto
20 cherry tomatoes, each cut into 3 slices
4 oz goat cheese
salt and pepper
fresh basil, sliced or sprigs

Preheat oven to 400 degrees and slightly dust a cookie sheet with flour. Roll out the pastry on a floured counter to 1/3 inch thick. Cut out 20 2 inch circles with a circle cookie cutter. Arrange the circles on the baking sheet. Spread a little pesto on each circle, leaving a margin around the edge. Arrange the tomato slices and crumbled goat cheese on the pastry circle. Sprinkle with salt and pepper if desired (not necessary in my opinion). Bake in the preheated oven for 10 minutes, or until the pastry is puffed up, crisp and gold. Garnish with the basil slices and serve warm.
