Caprese Sandwich with Brie Cheese

Our garden is in full bloom with lettuce, herbs, tomatoes, strawberries, carrots, broccoli and blueberries all going crazy. I love being able to pick the food I’m going to eat. The food has so much more flavor. I glanced out of the window trying to think up lunch. The ripe tomatoes and fresh basil inspired a caprese sandwich. However, I didn’t have mozzarella cheese. I didn’t let it deter me. I had brie, and I thought I’d give it a try. Guess what…amazing. Just toast up a sandwich roll or your favorite bread. Add brie cheese, tomatoes and basil. Drizzle with olive oil and balsamic, and you have a wonderful sandwich.

  1. Um, this sounds delicious. I love traditional caprese, but I’m a big fan of brie, so I think I’ll love it that way too.
