Day #171 – My Favorite Key Lime Pie



This has definitely become the #1 recommended dessert in our circles. It is a recipe that is now circulating around my friends and family as everyone seems to ask for the recipe one they try it. Furthermore, I find it fairly easy to make. For me, it has been a no-fail recipe. It can be made the night before too, which is always good in my book. My in-laws love Key Lime Pie. They have their favorite one at a high end restaurant in our area. When I made them this one they said it rivals their favorite and immediately asked for the recipe. On Father’s Day, I had made this for the gathering we were having with my family at my house. When I got to the in-laws house, they had made the same thing. I found this recipe in a Bon Appetit magazine a long while back. If anyone is familiar with my site, you’ll know that I love having my kids in the kitchen with me. They have so much fun and learn so much. It’s a simple way to begin being intentional with your kids.

 
Classic Key Lime Pie (serves 8)
Crust:
1 1/2 cups graham cracker crumbs (12 full crackers)
3 Tbsp sugar
1/4 tsp salt
6 Tbsp (3/4 stick) unsalted butter, melted
 
Filling:
1 14 ounce can sweetened condensed milk
2/3 cup Key lime juice (I find Nellie & Joe’s Key lime juice at Safeway)
3 large egg yolks
3 Tbsp sugar
3 Tbsp fresh lemon juice
1/4 tsp salt
 
Topping: 
1 1/2 cups chilled whipping cream
3 Tbsp powdered sugar
1 tsp vanilla extract
 
For Crust: Preheat oven to 350 F. Mix graham cracker crumbs, sugar and salt in a medium bowl to blend. Add melted butter and stir to coat well. Press crust into 9 inch diameter glass pie dish. Bake 5 minutes. Cool.
 
For Filling: Preheat oven to 275 F. Whisk all ingredients in large bowl until smooth. Pour mixture into cooled crust. Bake until center is set, about 25 minutes. Refrigerate uncovered until cold, then cover and chill at least 6 hours or overnight.
 
For Topping: Using electric mixer, beat all ingredients in large bowl until peaks form. Spread atop pie and serve.

    • Definitely needs to change. :-) Just made another one tonight. I know you’ll find it so simple based on your amazing blog. I think I’m a tad crazy with how I jumped into the blog with both feet. Having fun though.
