Day #103 – Buttercream Frosting

Today I made some cupcakes with my little man.  One of my readers asked for my buttercream icing recipe, and I thought the best way to give it to her was through a post.  My girls are gone much of the day on Wednesday, and we also host a small group most Wednesday evenings, so it was a great opportunity for the little guy to help me make some cupcakes for our group.  I guess I find all sorts of excuses to bake.  I often let the little ones help in the kitchen.  Yes, it can be a bit more challenging.  Especially when you have a 17 month old helping you while you are trying to take pictures.  Tricky? Yes.  Do-able?  Sure.  He really enjoys dumping the ingredients and feeling a part of the process.  I just did my favorite chocolate cake recipeThen, I did my favorite butter cream recipe from All Recipes.  It’s a simple buttercream, but I have found that I like the texture and consistency for the kind of cakes I do.  It has a good stiffness to it.  It compliments cake well too.  Whenever I taste it by itself I think, “Maybe this recipe isn’t that great.”  However, when it’s paired with the cake, I always take that thought back.
  • 2 cups shortening
  • 8 cups confectioner’s sugar (sifted for best results)
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream

Directions

  1. In a mixing bowl, cream shortening until fluffy. Add sugar, and continue creaming until well blended.
  2. Add salt, vanilla, and 6 ounces whipping cream. Blend on low speed until moistened. Add additional 2 ounces whipping cream if necessary. Beat at high speed until frosting is fluffy.

A helpful tip is to transfer your batter to a measuring cup so that it’s easier to pour.

For added deliciousness, add a Rolo to your batter.
